Day 6/30 Healthy Bowls : High Protein Beef Pasta

Technically not a bowl but I couldn’t not include it since I love pasta 🍝
INGREDIENTS (serves 2)
4 oz Barilla Protein+ Rotini (dry) — about 1 to 1.25 cups dry
12 oz ground beef (93/7 lean)
1 shallot diced (or 1/4 onion if you don’t have shallots)
1-2 tbsp jarred minced garlic
Salt and pepper
Italian seasoning (oregano, basil, thyme blend)
1 cup Tomato & Basil sauce (half the jar)
1/2 cup Good Culture cottage cheese (110g)
2 tbsp Parmigiano Reggiano, freshly grated (1 tbsp per bowl)
Fresh basil for garnish (optional)

Cook the pasta: Boil the Barilla Protein+ Rotini according to package directions (about 9-10 minutes). Drain and set aside.
Start the aromatics: Heat a large pan over medium heat. Add diced shallots and cook for 1-2 minutes until softened. Add jarred garlic and cook for another 30 seconds until fragrant.
Brown the beef: Add the 12 oz ground beef to the pan. Break it up as it cooks. Season generously with salt, pepper, and Italian seasoning. Cook until browned with no pink remaining, about 5-6 minutes.
Add the sauce: Pour in 1 cup of Newman’s Own sauce. Stir everything together and let simmer for 2-3 minutes.
The cottage cheese trick: In a small blender or with a fork, blend the 1/2 cup cottage cheese until completely smooth. Stir it into the sauce. It adds creaminess and protein without cream. You won’t taste it.
Combine: Add the cooked pasta to the sauce. Toss everything together and let it sit for 1 minute so the pasta absorbs the sauce.
Plate: Divide between two bowls. Grate fresh parmesan on top (1 tbsp per bowl). Add fresh basil if you have it.
