How to Make Coca Cola-braised Short Ribs

800g boneless beef short ribs
355mL bottle Coca Cola
1L beef stock
1 onion
1 large carrot
1 tbsp tomato paste
2-3 tbsp fish sauce
2 tbsp neutral oil
1/2 bunch parsley
3-4 sprigs thyme
1/2 cup white polenta
1 cup milk
1 cup water
50g fresh Parmesan (to grate)
2 tbsp cold butter
Fine sea/kosher salt (to taste)

Ideally 24 hours before cooking, cut your short ribs into 4 equal portions, and dry them out on a wire rack in the fridge overnight.
Pre-heat your oven to 325 degrees Fahrenheit. Season your short ribs generously with salt. Peel and cut your onion & carrot into large chunks. In a large Dutch oven, sear your short ribs over medium-high heat in 2 tbsp neutral oil until nicely browned.
Remove the short ribs, turn the heat down to medium, and add your carrots & onion. Sauté for 3-5 minutes, or until lightly caramelized. Add your tomato paste and sauté for 1 more minute. Add your Coca Cola to deglaze, and add back in your short ribs. Cover everything with beef stock, and bring to a boil. Once at a gentle simmer, add your fish sauce, thyme, and the stems from your parsley. Cover your pot, and transfer it to the oven. Cook for 2-3 hours, or until the short ribs are fork tender. When finished, let the short ribs rest in the liquid to cool to room temperature.
For your polenta, bring your milk & water to a boil in a medium pot. Bit by bit, whisk in your polenta. Cook your polenta, stirring often, for 30 minutes. When it has thickened to the point it can stand up on a plate. Add your cold butter, grated Parmesan, and a pinch of salt to taste. Whisk to combine, and keep warm.
