Pesto Chicken Meal Prep

Ingredienti

2 Large hand fulls of fresh chopped spinach

1/2 cup chopped red onion

3 table spoons pesto

1 cup 0% fage greek yogurt

salt and pepper to taste

2lbs cubed chicken thighs (If you want lower fat and lower calorie you can use chicken breast)

1/2 cup parm cheese (divided)

1/2 cup jasmine rice

1 cup chicken stock

1/4 cup chopped sun dried tomatoes

Istruzioni

Pre heat oven to 375 degrees F

Add spinach, onions, pesto, yogurt, salt, pepper, 1/4 cup parm cheese, and chicken to a large mixing bowl. Combine and mix thoroughly then set aside.

in a 9x9 baking dish add un cooked rice and chicken stock. Top with your chicken spinach mixture. Sprinkle remainder of parm cheese, top with sun dried tomatoes. then place in the oven on 375 degrees for 45mins

Let it cool for 10 min, and ENJOY!
