Chicken Fried Steak with Creamy Gravy

4 (4- to 5-ounce) cubed steaks, pounded to 1/4-inch thickness

1/2 teaspoon black pepper

2 1/2 teaspoons kosher salt, divided

1/2 cup all-purpose flour (about 2 1/8 ounces)

1/2 cup buttermilk

2 large eggs

1 teaspoon cayenne pepper

3 cups crushed cornflakes cereal

1 cup canola oil, for frying

3 tablespoons all-purpose flour

1 cup heavy cream

1 cup buttermilk

1 teaspoon kosher salt

1/2 teaspoon black pepper, plus more to taste

1/4 teaspoon garlic powder

Istruzioni

Preheat oven to 200°F. Set a wire rack on a rimmed baking sheet; set aside. Sprinkle steaks evenly with black pepper and 1 1/2 teaspoons salt.

Place flour in a large, shallow bowl. Whisk together buttermilk, eggs, and cayenne pepper in a second large, shallow bowl. Combine cornflakes and remaining 1 teaspoon salt in a third large, shallow bowl.

Working in batches, dredge steaks in flour, shaking to remove excess. Dip in buttermilk mixture, letting excess drip off. Dredge in cornflakes, turning to coat and patting to adhere. Transfer coated steaks to a parchment paper–lined work surface or baking sheet.

Make the gravy

Add oil to a large skillet to a depth of 1/4 inch; heat over medium-high until shimmering. Fry steaks, 1 or 2 at a time, until golden brown, 2 to 3 minutes per side, adjusting heat as needed. Place steaks on prepared wire rack on baking sheet, and transfer to preheated oven to keep warm while frying remaining steaks.

Reserve 3 tablespoons frying oil. Discard remaining oil; wipe skillet clean. Heat reserved oil in skillet over medium. Add flour; cook, stirring constantly, 1 minute. Whisk in cream, buttermilk, salt, black pepper, and garlic powder. Cook, stirring constantly, until bubbling and thickened, about 5 minutes. Remove from heat.

Serve steaks smothered with gravy with green beans alongside, if desired. Sprinkle with black pepper to taste.
