maple-sesame smashed sweet potatoes

4 medium sweet potatoes, cut into
½-inch-thick rounds
2 tablespoons extra-virgin olive oil
Fine pink Himalayan salt
2 tablespoons pure maple syrup
½ teaspoon ground cinnamon
½ to 1 teaspoon ground cayenne
pepper
4 tablespoons (stich, go at room temperature
2 tablespoons toasted son (see Note on page 53)
Flaky sea salt
Fresh mint leaves, for ser (optional)
Istruzioni
1. Preheat the oven to 425°F.
2. On a baking sheet, combine the sweet potatoes, olive oil, and ar pink salt. Toss to coat. Arrange in an even layer. Bake for 20 minute
3. Meanwhile, in a small bowl, stir together the maple yup co and cavenne. Remove the potatoes from the oven and drizzle the m mixture over them. Return to the oven and bake until the potatoes an tender, 15 minutes more.
4. Remove the potatoes from the oven. Using a fork, flip them one gently press down to lightly smash the potatoes, keeping the touri intact. Set the oven to broil, return the potatoes once more, and cot lightly charred, another 5 to 10 minutes.
5. Transfer the potatoes to a serving platter. Generously smarte on top of each potato slice. Sprinkle them with the sesame ed, in and mint (if using). Serve warm.

These potatoes are going to surprise "I you. In fact, the recipe might sound odd to you, but you just have to trust me on it. They're a super-fun way to totally reinvent the average sweet potato. Toss thick slices of baked sweet potato in a sweet, spicy maple mix,
