4 lb sliced beef top round
1/2 cup low sodium tamari incl 2 tbs coconut aminos
4 tbs Worcestershire sauce
2 tbs liquid smoke
4 tbs brown sugar substitute
3 tsp salt
1 tsp Lowry’s seasoned salt
2 tsp ground black pepper
2 tsp Adolph’s meat tenderizer
2 tsp onion powder
2 tsp garlic powder
2 tsp paprika or smoked paprika
Istruzioni
Slice top round to 5/16” thick electric meat slicer preferred
Mix marinate well and add to 4 lbs sliced meat in large ziplock
Marinate in refrigerator 12-24 hours, turning occasionally
Dump marinated meat into a colander in sink
Lay meat on double layer of paper towels on counter. Cover meat with another layer of paper towels. Gently pound for uniform thickness. Repeat as needed
Put meat in dehydrator. Set temp at 165 F. Set y to time for 4 hours and check. Usually takes 5 hrs total
Note
Optional- add honey, molasses, red pepper flakes
Future experiments- hot honey, coconut flakes, ??
