Budget Cheeseburger Recipe

12 oz medium ground beef (divided into 4 x 3 oz balls)
4 slices American cheese
Salt and black pepper
½ white onion, thinly sliced and soaked in ice water
2 brioche buns
½ cup mayonnaise
1 tbsp ketchup
1 tbsp Dijon mustard
2 pickles, finely chopped
2 tsp pickle brine
1 tsp adobo sauce
½ tsp garlic powder
⅛ tsp cayenne pepper
200 g cucumber, thinly sliced
200 g rice vinegar
100 g water
30 g sugar
6 g salt
2 g MSG
Istruzioni
Make the Pickles
In a pot, combine rice vinegar, water, sugar, salt, and MSG.
Bring to a boil and pour over sliced cucumbers in a heatproof jar.
Let sit for at least 30 minutes before using. Store leftovers in the fridge.
Mix the Burger Sauce
In a bowl, combine mayo, ketchup, mustard, pickles, pickle brine, garlic powder, and cayenne. Mix well and refrigerate until ready to use.
Cook the Burgers
Preheat a cast iron skillet over high heat.
Form your ground beef into 4 x 3 oz balls.
Add to the hot pan and smash down firmly using a spatula or heavy pan.
Season with salt and pepper.
Cook for 2–3 minutes until a deep brown crust forms. Flip and top with cheese.
Cover for 30 seconds to melt the cheese.
Assemble
Toast your buns if desired. Spread burger sauce on both sides, add the patties (2 per burger), a handful of rinsed white onions, and homemade pickles. Serve immediately.
