Chicken Pesto Pasta

500g penne pasta
190g pesto sauce from jar
40 g pine nuts
120g baby spinach
250g cherry tomatoes
600g chicken thigh
220g Bocconcini cheese
Istruzioni
PREP:
Half or quarter the cherry tomatoes, 2 minutes.
Dice the chicken thigh, 10 minutes.
Wash the spinach.
COOK:
Boil pasta until cooked, ~15 minutes.
In the meantime, fry the chicken thigh until mostly cooked.
Add pine nuts and toast.
Add Cherry tomatoes and spinach. Mix and fry.
Nead the end, add some bocconcini cheese in small chunks and stir.
Once pasta is cooked, remove from heat and drain. Add pesto sauce and stir.
Combine chicken mixture into pasta and serve. Garnish with fresh bocconcini.
