360 grams flour
7 grams active dry yeast
25 grams sugar
250 ml warm whole milk (2% can also be used)
1 egg
40 grams melted butter

Filling
200 grams mozzarella
160 grams shredded chicken
1 tbsp olive oil
60 ml buffalo sauce
1/4 diced onion
3 tbsp chopped parsley
1 tsp garlic powder
1 tsp paprika
Pinch of salt and pepper
Egg wash
1 egg
1 tbsp milk
Topping
30 grams melted butter
1 tsp dried parsley
1 tsp honey

First Proof
Heat up your milk to 75-80 F.
Whisk together the yeast, milk, and sugar. Let this bloom for 5-10 minutes.
Beat the egg in a separate bowl.
Add the flour, salt and melted butter in a mixing bowl. Add the yeast and egg. Mix the ingredients until a shaggy dough forms.
Transfer your dough to the KA mixture with a dough hook. Use the #2 setting in the KA machine until the window pane forms. This dough can also be made by hand, but it may take a few more minutes to develop the gluten.
Oil the bowl and cover the dough with a towel for 2 hours. Place into the microwave or oven with the light on.
Filling
Make the filling by using rotisserie chicken or chicken breast. With a pan on medium low heat add olive oil, onion and parsley. Add in the shredded chicken, paprika, salt and pepper. Then finally, add in the buffalo sauce. Mix well. Remove from the heat and let it cool.
Second Proof
After the 2 hours your dough should be double in size. Punch down the dough and divide into 6 equal piece by weighing.
Roll your dough out to 1/4 inch thick circle. Add the chicken filling and follow by cheese. Crimp the ends to seal the ball.
Place on a lined baking sheet, cover the dough and let them rest for 1 more hour.
Baking
Preheat the oven to 375F.
Prepare your egg wash, and brush the dough.
Bake the buns for 20 minutes.
