Sauce base:
300g silken tofu (1 standard pack, lightly drained)
Meat & Flavors base:
2 tbsp neutral oil
5 small clove garlic, minced
500g minced pork or chicken
5 shiitake mushrooms, cubed
1 tbsp doubanjiang (spicy fermented bean paste)
1tbsp Shaoxing wine
1.5tsp black vinegar
1 tbsp chili oil (adjust to taste)
Optional for more tang: rice vinegar to taste)
Noodles:
250g udon noodles (fresh or frozen)
Garnish:
Chopped spring onions
Toasted sesame seeds or chili crisp
Extra drizzle of chili oil
INSTRUCTIONS
Fry garlic in oil till fragrant
Fry minced meat & mushrooms till slightly brown
Add all the sauces in & cook till meat is fully cooked thru
Blend toufu till smooth
Cook udon
Plate: udon > meat > toufu > toppings > enjoy
