Creamy Cajun Chicken & Sausage Orzo

1 lb chicken breast
1 tbsp olive oil
1 lb Cajun sausage, sliced (andouille or smoked)
1 small onion, diced
3-4 cloves garlic, minced
1½ cups orzo
3 cups chicken broth
½ cup heavy whipping cream
½ cup shredded Parmesan
Fresh parsley, for garnish
Cajun seasoning, salt, and pepper—to taste
Petunjuk
Season chicken to taste with Cajun seasoning, garlic powder, and onion powder. Heat olive oil in a skillet and brown the chicken on both sides. Add sausage and cook until browned. Remove both from the pan.
Sauté onion until tender, then add garlic. Stir in orzo and toast for a few minutes. Pour in chicken broth and bring to a boil. Add salt, pepper, or more Cajun seasoning here if needed. Simmer until orzo is tender and most of the liquid is absorbed.
Stir in heavy cream and Parmesan until creamy. Add chicken and sausage back in, mix it all together, and top with fresh parsley.
