170g unsalted butter
3 cloves garlic, finely minced

2 tsp finely chopped fresh thyme, rosemary or oregano

1.35kg low-starch potatoes such as Yukon, yellow or red

Preheat oven to 200 °C.
Clarify 200 g butter: melt over medium heat, reduce to low, skim off foam, and gently cook until clear and golden. Carefully pour off the clear butter, leaving milk solids behind.
Pour about 60 ml clarified butter into a 23–25 cm oven-safe non-stick or well-seasoned cast-iron pan, swirling to coat the bottom.
Add 2 cloves minced garlic to the remaining butter and gently cook for 30 seconds until fragrant. Stir in salt, pepper, chopped parsley, and optional herbs. Let cool slightly.
Thinly slice 700–800 g potatoes (unpeeled if you prefer) to just under 3 mm. A mandolin works best. Toss slices with the garlic-herb butter.
Arrange potatoes in the pan in overlapping concentric circles, starting in the center. Use the best slices for the bottom (this will be the top later). You should have about 4 layers.
Cover with parchment paper and place a weight on top (another oven-safe pan or pot).
Brown on the stovetop over medium heat for 4–5 minutes.
Transfer to the oven and bake covered for 25 minutes.
Remove weight and parchment, then bake uncovered for 20 minutes, until a skewer passes through easily.
If needed, briefly return to the stovetop to deepen browning (2–3 minutes).
Carefully drain excess butter, then flip onto a serving plate.
Sprinkle with flaky salt, rest briefly, slice into wedges, and serve warm.
