2 tbsp olive oil 2 small onions, diced 1 red pepper, finely chopped 2 yellow peppers, finely chopped 3 gariic doves, crushed 2 red chillies, finely chopped 1 sweet potato, finely diced 3 carrots, grated 1 courgette, grated 1 tsp ground cumin 1 tsp ground coriander 2 tsp tomato puree Salt and pepper 400g kidney beans, drained and rinsed 2 x 400g tins of tomatoes 400g lean beef mince 900ml hot beef stock 2 tbsp Worcestershire sauce 2 handfuls spinach leaves, washed To serve: 1 avocado, peeled, pitted and chopped

Sour cream Rice, tortilla wraps or homemade potato wedges

Petunjuk

1 Place a large pan over a medium-high heat and add the olive oil. Add all of the vegetables with the cumin, coriander and tomato puree, and season well. Cook for 6-7 minutes until the vegetables have softened, stirring every minute or so to prevent catching.

2 Add the kidney beans and the tinned tomatoes. Add the beef mince, breaking it up with a wooden spoon. Add the beef stock and the Worcestershire sauce and season with salt and black pepper.

3 Bring the chilli to the boil, then turn the heat down to a simmer and cover, leaving the lid slightly askew. Simmer for about an hour, stirring every now and again.

4 Immediately before serving, stir in the spinach.Top with sour cream and chopped avocado and serve with wraps, wedges or rice.
