Paprika
Green Thai fish curry

2 tbsp vegetable oil
2 tbsp green Thai curry paste
125mI fresh Irish cream
100ml coconut milk
100ml chicken stock
1/2 tbsp fish sauce
1 tsp brown sugar
1 tbsp lime juice
150g green beans, trimmed and halved
400g cod fillets, cut into bite-sized pieces
A small handful of fresh basil leaves
To serve:
Steamed rice

1 Heat the oil in a large frying pan over a medium-high heat. Stir in the curry paste and cook for one minute until fragrant.
2 Stir in the cream, coconut milk and stock until combined. Bring to a boil, then reduce the heat and simmer for five minutes.
3 Stir through the fish sauce, brown sugar and lime juice.
4 Add the green beans and cod and cook for six minutes until the fish is cooked through.
5 Stir through the basil leaves until wilted and serve on a bed of steamed rice.
