Chargrilled Spicy Lamb Chops & Ratatouille with Feta

For the tamb chops'.
1 tbsp olive oil
1 tbsp thyme, chopped
12 lamb cuttets
1 tbsp spices or curry powder
Salt and black pepper For the ratatouitte & Feta. 1 tbsp olive oil 2 shallots, diced 2 garlic doves, crushed 2 x punnets of cherry tomatoes 1 tbsp tomato puree 1/2 glass of white wine 1 red pepper, deseeded and diced 1 aubergine, diced 2 courgettes, diced 1 tbsp oregano lOOg Fela, diced

1 Mix Ihe oil and thyme and coat the lamb cullets with the mix. Season with the spices, salt and black pepper. 2 Heat a grill pan over a high heal until
hot. Cook the outlets for three minutes per side. Set aside and keep warm. 3 Heat some of the oil for the ratatouille in a frying pan over a medium heat. Cook the shallots and garlic for two minutes, then add the tomatoes and cook for 2-3 minutes more. 4 Add the tomato puree and wine. Season with salt and black pepper and simmer for two minutes. 5 In another oiled frying pan,cook the pepper for two minutes. Add the aubergine and courgettes and cook for a further two minules. Season well. 6 Add the tomato sauce and oregano into the vegetables. Nix to combine and cook for one minute. 7 Just before serving, add the Feta.
