Passover Brownie Cookies Are Back

1/3 cup oil

3/4 cup brown sugar

1/4 cup white sugar

1 tsp vanilla

1 egg

1/4 cup cocoa

1/4 cup potato starch

Pinch of salt

1 ~90g box instant chocolate pudding powder (I prefer osem or liebers)

1/2 tsp passover baking powder

1/2 cup each mini marshmallows

1/2 cup chocolate chips

Petunjuk

Preheat oven to 350°F.

Whisk together oil, sugars, vanilla and egg.

Add in cocoa, potato starch, salt, pudding powder and baking powder. Mix to combine.

Mix in marshmallows and chocolate chips.

Using gloves or damp hands, roll into ~14 balls and place on a lined baking sheet.

Top with any chocolate chips or marshmallows that have fallen out of the dough.

Bake for 12-13 minutes.
