Loaded Ground Beef, Green Beans & Potato Bake

1 lb ground beef
4 medium potatoes, peeled and cut into chunks
1 ½ cups green beans (fresh or frozen)
1 small onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, with juices
2 tbsp olive oil
1 tsp paprika
1 tsp Italian seasoning
½ tsp salt (or to taste)
½ tsp black pepper
1 cup shredded cheddar or mozzarella cheese (optional)
1 tbsp fresh parsley, chopped (optional)

Preheat your oven to 400°F and lightly grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook the ground beef for about 6 to 8 minutes until browned. Break it up as it cooks, then drain any excess grease.
Add the chopped onion and garlic to the skillet and cook for 2 to 3 minutes until softened and fragrant.
Stir in the diced tomatoes, paprika, Italian seasoning, salt, and pepper. Let everything cook together for about 2 minutes, then remove from heat.
In your prepared baking dish, add the potatoes and green beans. Drizzle with olive oil and toss lightly.
Pour the beef mixture over the vegetables and gently mix so everything is evenly combined.
Cover the dish with foil and bake for 40 minutes, until the potatoes start to become tender.
Remove the foil, stir gently, and return to the oven uncovered for another 15 to 20 minutes until the potatoes are fully cooked and slightly golden.
If using cheese, sprinkle it over the top and bake for an additional 5 minutes until melted and bubbly.
Let it rest for a few minutes, then sprinkle with fresh parsley and serve war
