Day 1 of Veganuary | Tandoori-style Tofu Skewers

Kicking off Veganuary with this vibrant and DELICIOUS dish! Minimum effort, maximum reward and absolutely perfect for sharing (but you might not want to xoxo).

For the tofu skewers:

450g extra-firm tofu, water pressed out

200g DF yoghurt

Seasoning for marinade: 1 tbsp curry powder, 1 tsp garlic powder, 1 tsp ground coriander, 1 tsp cumin, 1 tsp paprika, 1/2 tsp turmeric, juice of 1/2 lemon, salt and pepper.

For the mint yoghurt:

150g DF yoghurt

A handful of fresh coriander leaves

A handful of fresh mint leaves

1 green chilli

Juice of ½ a lemon

A splash of maple syrup (to taste)

¼ teaspoon garam masala

Salt, to taste

2 tablespoons of water

To serve:

Naans, pickled red onions and lime wedges.

Petunjuk

Preheat the oven or air fryer to the grill function at 200C.

Make the yoghurt marinade: In a bowl, mix the seasoning ingredients into the soy yoghurt. Tear the tofu into bite-sized chunks, toss it in the marinade, and let it sit for 5 minutes to soak up the flavours.

Assemble the skewers: Thread the marinated tofu pieces onto skewers. Grill or air fry for 10 minutes, turning halfway through, until slightly charred at the edges.

Prepare the mint yoghurt: Add all the mint yoghurt ingredients to a blender and blend until smooth. Adjust seasoning to taste.

Plate up: Serve the skewers hot with warm naan, the mint yoghurt, pickled onions, fresh coriander and mint and lime wedges.
