Sheet Pan Fajitas 🌮🫑🥑
1 ½ lb chicken breast, chopped into strips
3 bell peppers, sliced into strips
1 red onion, sliced into strips
1 Tbsp avocado oil
1/2 packet taco seasoning
1 c frozen corn
1 lime
1 c shredded mozzarella
Petunjuk
Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and add chicken, peppers, and onion. Drizzle with avocado oil, then sprinkle with taco seasoning. Toss to coat.
Sprinkle corn on top, then slice open lime and squeeze juice all over the mixture. Add the lime halves to the pan and roast 20 mins, or until chicken is cooked through and peppers are tender.
Remove from oven, sprinkle with cheese, then bake another 5 mins until cheese is melty.
I served mine with a dollop of Greek yogurt and some guac inside La Banderita avocado-oil fajita tortillas! Enjoy!
