Tandoori Tacos

Cooked Air Fried Tandoori Chicken (see previous recipe)

Tortillas or rotis (your choice)

Grated cheddar cheese

Butter (for toasting tortillas)

Finely chopped red onions

Fresh coriander (cilantro), chopped

Fresh lime juice (for garnish)

Yogurt Green Chutney Sauce:

1 ½ cups coriander/cilantro (packed)

1 tsp cumin seeds

2 Thai green chilis

2 garlic cloves; peeled

1/4–1/2 inch piece of ginger, peeled

1 –2 tbsp lime or lemon juice

Salt to taste

1 cup Whole Milk Plain Yogurt (adjust for consistency and taste)

Prepare the Chicken:

Step 1

If you’ve made Air Fried Tandoori Chicken, remove the bone by carefully cutting around it. (see previous recipe)

Step 2

Cut the chicken into small cubes or strips, depending on how you like it.

Make the Yogurt Green Chutney Sauce:

Step 1

Add coriander, cumin seeds, green chilis, garlic, ginger, lime juice, salt to taste (I added ½ tsp), and yogurt to a blender.

1/4–1/2 inch piece of ginger, peeled

1 –2 tbsp lime or lemon juice

Salt to taste

1 cup Whole Milk Plain Yogurt (adjust for consistency and taste)

Step 2

Blend until smooth.

Step 3

Adjust yogurt as needed for your preferred consistency and flavor. Set aside.

Assemble the Tacos:

Step 1

Heat a pan over medium heat and add a bit of butter.

Step 2

Once melted, place your tortilla or roti in the pan.

Step 3

Add diced tandoori chicken to one half of the tortilla.

Step 4

Sprinkle grated cheddar cheese over the chicken.

Step 5

Fold the tortilla in half to help the cheese melt.

Step 6

Cook until the bottom is golden brown and crisp, then flip and cook the other side the same way.

Finish & Serve:

Step 1

Open up the crispy taco and drizzle in yogurt green chutney sauce. (Add as much as you want)

Step 2

Top with a bit of finely chopped red onions, fresh coriander, and a squeeze of fresh lime juice.
