Carrot Cake Donuts

1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1 egg, room temperature
1/2 cup light brown sugar
1/4 cup vegetable oil
1 tsp vanilla extract
2/3 cup grated carrots
Cream Cheese Icing
1/4 cup cream cheese
2 tbsp unsalted butter
3/4 cup powdered sugar
1 tsp vanilla extract
Toasted shredded unsweetened coconut (for garnish)
Chopped walnuts or pecans (for garnish)

Preheat oven to 350°F and lightly coat a donut pan with nonstick spray. Set aside.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
In a large bowl, whisk egg and brown sugar until light and slightly pale. Add oil and vanilla and whisk to combine.
Add dry ingredients into wet ingredients and stir until just combined. Fold in grated carrots.
Spoon or pipe batter into donut pan, filling each cavity about halfway. Bake for 8–10 minutes, or until set and lightly golden. Let cool in pan for 2 minutes, then transfer to a wire rack to cool completely.
To make icing, beat cream cheese and butter together with a hand mixer until smooth.
Add powdered sugar and vanilla and beat until fully combined and fluffy.
Spread icing over cooled donuts and top with toasted coconut or chopped nuts. Enjoy!
