Russian Blinchiki (Crepes)

Whole Milk - 1 1/4 cups (300 ml)

Petunjuk

•    Dry Mix: 1 cup (approximately 125 g, half the packet).

•    Milk: 1 1/4 cups (300 ml).

•    Butter: 1 tablespoon.

Step 3: Instructions for Making the Blinchiki

1    Prepare the Batter:

◦    In a bowl, combine 1 cup/125g of the blinchiki mix (half a packet), 1 1/4 cups of milk, and 1 tablespoon of butter.

◦    Whisk until smooth and free of lumps. The batter should be thin, like heavy cream, to spread easily in the pan.

2    Let the batter sit for 15–30 minutes for better texture (this step is optional but recommended).

3    Heat the Pan (medium heat). Pan needs to be very hot before pouring the batter.

◦    Lightly grease the pan with spray oil, spreading it with paper towel.

◦    Pour a small amount of batter (about 2–3 tablespoons for an 8-inch pan) into the heated pan.

◦    Swirl the pan to spread the batter into a thin, even layer.

◦    Cook for 1–2 minutes on the first side until the edges lift and the bottom is lightly golden.

◦    Flip and cook for another 30 seconds to 1 minute on the other side.

◦    Repeat until all the batter is used, stacking the blinchiki on a plate. Grease the pan lightly between blinchiki if needed.
