Mediterranean vegetable calzone

750g frozen Mediterranean

roasting vegetables

2 garlic cloves, crushed

3tbsp olive oil

2tbsp sun-dried tomato paste (we used Saclå)

2 x 280g chilled ready-rolled pizza dough

150g mozzarella cheese, drained and torn into pieces

rocket leaves, to serve

Petunjuk

1 Heat the oven to 20°C/Gas Mark 6. Tip the roasting tray vegetables into a large roasting tray, spread out evenly, scatter with garlic, drizzle with 1tbsp of the oil and roast for 25-30mins until tender.

2 Mix the tomato paste and remaining oil together, add to the vegetables and toss to coat. Season with salt and freshly ground pepper. Cool slightly.

3 Increase the oven to 220C/Gas Mark 7. Spread half the vegetables over one half of each dough round, and brush the edges with water. Top with pieces of mozzarella then fold each dough round in half and twist the edges to seal.

4 Place on a baking tray and bake for 20mins, until the dough is crisp. Serve half a calzone per person, with rocket leaves
