Tandoori Chicken w/ Green Chutney Sauce

Chicken:
3 chicken thighs, bone in, skin removed
1 ½ tbsp ginger garlic paste
3 –4 tsp freshly squeezed lime juice
1 ½ tsp kosher salt
Marinade:
½ cup plain yogurt
1 tbsp vegetable oil (or any neutral oil)
1 ½ tbsp Kashmiri red chili powder (for authentic color and mild heat)
¼ tsp turmeric
½ tsp cumin powder
½ tsp cardamom powder
½ tsp cinnamon powder
1 tsp kasuri methi, crushed
Salt to taste
Yogurt Green Chutney Sauce:
1 ½ cup Coriander/Cilantro
1 tsp Cumin Seeds
2 Thai Green Chilis
2 Garlic Cloves
¼ - ½ inch Ginger; Peeled
1 - 2 tbsp Lime/Lemon Juice
Salt to Taste
1 cup Yogurt

Prepare the Chicken:
Step 1
Take bone-in chicken thighs and remove the skin.
Step 2
Cut 3-4 deep slits across each piece—this helps the marinade penetrate and flavor the meat thoroughly.
Step 3
Rub the chicken with ginger garlic paste, lime juice, and kosher salt.

Step 4
Set aside to tenderize on the side, while you prepare the marinade.
Make the Marinade:
Step 1
In a mixing bowl, add yogurt, oil, Kashmiri red chili powder, turmeric, cumin powder, cardamom powder, cinnamon powder, kasuri methi, and salt to taste (I used ½ tsp).

Step 2
Whisk until smooth and well combined.
Step 3
Add the pre-seasoned chicken to the bowl and completely coat each piece with the marinade.
Air Fry the Chicken:
Step 1
Preheat your air fryer to 400ºF (200ºC).
Step 2
Line the air fryer tray with foil or parchment paper to catch drippings and prevent sticking.
Step 3
Place the marinated chicken thighs in the tray with the slit side facing up.
Step 4
Air fry for 20 minutes, until the chicken is nicely charred and cooked through.
Step 5
Turn off the air fryer and let the chicken rest inside for an additional 10 minutes. This step locks in moisture and results in incredibly juicy meat.
Make Yogurt Green Chutney Sauce (Optional):
Step 1
While the Chicken is cooking, add the following into a blender and blend till smooth. (I added ½ tsp Salt, just in case you wanted an exact measurement)
1 ½ cup Coriander/Cilantro
1 tsp Cumin Seeds
2 Thai Green Chilis
2 Garlic Cloves
¼ - ½ inch Ginger; Peeled
1 - 2 tbsp Lime/Lemon Juice
Salt to Taste
1 cup Yogurt
Step 2
You can add/reduce the amount of Yogurt based on the flavor and consistency you want
