Scallops and Cauliflower (and Brocolli) Rice

Bahan-bahan

2 tablespoons extra-virgin olive oil, plus extra for the scallops

1 cup chopped broccoli

4 cloves garlic, crushed

2 spring onions, chopped, plus extra to serve

4 cups shredded cauliflower (easily done with a cheese grater)

½ cup Greek yoghurt

⅓ cup grated parmesan cheese

salt and pepper

400 grams scallops

Petunjuk

1. Heat the olive oil in a frying pan and cook the broccoli, garlic and onion for a few minutes.

2. Add the cauliflower and cook for another few minutes. Add the yoghurt and parmesan, season with salt and pepper, then turn off the heat to allow the residual heat to cook the cauliflower mixture.

3. In another frying pan, heat some olive oil and cook the scallops for 1-2 minutes on each side.

4. Assemble by putting the cauliflower rice in a serving dish and top with the seared scallops. Garnish with some chopped spring onions.
