Passover Almond Chocolate Cookies

3 cups almond flour
¾ cup sugar
3 large egg whites
2 cups sliced raw almonds
½ cup chocolate chips (for dipping)
Petunjuk
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk egg whites and sugar until slightly frothy.
Add almond flour and mix until a soft dough forms.
Roll dough into small logs and coat in sliced almonds.
Place on baking sheet and bake for ~20 minutes until lightly golden.
Cool completely.
Melt chocolate chips until smooth.
Dip each cookie diagonally into chocolate.
Let set on parchment paper.
Yield: 18–22 cookies
Tip: You can also turn these into jam-filled cookies!
