QUICK PRAWN KORMA

1 tbsp olive or rapeseed oil
1 onion, thinly sliced
1 x 2cm piece of ginger, peeled and grated
2 garlic cloves, crushed
1 tsp turmeric
2 tsp garam masala
½ tsp chilli flakes (or to taste)
1 x 400mI tin of coconut milk
500g cooked prawns, peeled and deveined
3 tbsp ground almonds
1 tbsp fresh coriander, chopped, plus extra to serve
To serve:
Rice and/or naan bread
Petunjuk
1 Heat the oil in a wide, deep pan over a low heat. Add the onion and cook for 6-8 minutes until softened.
2 Add the ginger, garlic, turmeric, garam masala and chilli. Cook for 1-2 minutes, stirring occasionally, adding a splash of water if it gets too dry.
3 Add the coconut milk and bring to a simmer. Add the prawns and simmer gently for 2-3 minutes.
4 Add the ground almonds and chopped coriander and cook for one minute longer. Scatter with a little extra chopped coriander and serve with rice and/or naan bread.
