Apple & Cranberry Chutney
Makes 4 x 500g jars

1kg cooking apples, peeled and chopped into small chunks
500g eating apples, peeled and chopped into large chunks
450g onion, sliced
50g fresh ginger, peeled and finely chopped
1 tsp peppercorns
500g caster sugar
250mI cider vinegar
500g cranberries
Petunjuk
1 Place all of the ingredients except for the cranberries in a large heavy-based saucepan. Gently heat, stirring, until the sugar dissolves.
2 Bring to the boil, then reduce the heat and simmer, uncovered, for about 50 minutes, stirring regularly unti the apples and onions are tender, the mixture has thickened and no watery juice remains.
3 Add the cranberries, then cook for a further 10 minutes until softened but not burst.
4 Spoon the hot chutney into sterilised jars and seal.
5 Store unopened in a cool, dark place. The chutney will keep for up to six months. Once opened, refrigerate the chutney.
