Chile Lime Chipotle Chicken - Meal Prep

2 ½ lbs boneless chicken thighs, trimmed
Salt & black pepper, to taste
1 tbsp paprika
1 tbsp Aleppo pepper or chili flakes
1 tbsp garlic powder
½ tbsp chipotle powder
½ tsp coriander
¼ tsp cayenne pepper
2 tbsp plain yogurt
1 tbsp olive oil
2 tbsp fresh cilantro, chopped
Juice of 1 large lime
½ large red onion, thinly sliced
Petunjuk
Season
Place chicken in a large bowl. Add salt, pepper, paprika, Aleppo pepper, garlic powder, chipotle powder, coriander, cayenne, yogurt, olive oil, cilantro, and lime juice.
Mix & Marinate
Mix very well until fully coated. Add sliced red onion and mix again.
Marinate 2–4 hours if possible (can cook immediately if needed).
Prep Oven
Remove chicken from fridge and let sit at room temp for 30 minutes.
Preheat oven to 425°F (220°C).
Roast
Pack chicken tightly into a loaf pan (approx. 8.5 × 4.5 × 2.5 inches).
Bake for 50–55 minutes.
Drain & Slice
Remove from oven. Carefully pour excess juices into a bowl (save them!).
Flip chicken onto a cutting board and slice into strips or cubes.
Serve
Spoon the reserved juices over the chicken and serve however you like.
