Day 5/30 Healthy Bowls: Tuscan White Bean & Chicken Bowl

3/4 cup farro (or sub brown rice/quinoa)

8 oz chicken breast, cut into bite-sized pieces

1/2 tsp Salt, pepper, paprika, oregano, garlic powder

1/2 cup canned white cannellini beans, drained and rinsed

2 tbsp sun-dried tomatoes (not oil-packed), chopped

2 cups baby spinach

Petunjuk

Cook farro according to package (about 25-30 minutes). Or use your grain of choice.

Season chicken pieces with salt, pepper, paprika, oregano, and garlic powder. Cook in a hot pan until golden on all sides.

Add white beans and chopped sun-dried tomatoes to the same pan. Toss everything together until warm.

Throw in baby spinach, it wilts in about 30 seconds.

Build your bowls: farro on the bottom, chicken-bean-spinach mixture on top, drizzle with balsamic glaze (optional)
