Roasted Bell Pepper Pasta

2 red bell peppers

½ red onion

1 garlic bulb

2 Roma tomatoes

Olive oil (enough to coat vegetables)

Salt, to taste

Pepper, to taste

Chili flakes, to taste

½ cup heavy cream

1 ½ tbsp cream cheese

1 ½ cups rigatoni (or your favorite pasta)

Freshly grated Parmesan cheese (optional, for garnish)

Finely chopped parsley (optional, for garnish)

Petunjuk

Prep & Roast the Veggies:

Step 1

Preheat your oven to 425ºF (220ºC).

Step 2

Cut the red onion in half, peel it, and remove the root. (Store 1 half for using later in your other recipes)

Step 3

Cut the bell peppers in half, remove stems, white insides and seeds.

Cut the tomatoes in half.

Step 5

Slice the top off the garlic bulb to expose the cloves.

Step 6

Place everything on a baking tray.

Step 7

Drizzle generously with olive oil, and season with salt, pepper, and chili flakes. (enough to cover all the veggies)

Step 8

Bake for 30 minutes, until vegetables are softened and charred.

Step 9

Let them cool. Peel the skin off the bell peppers— this step removes bitterness and gives a smoother sauce.

Make the Sauce:

Step 1

Add the roasted veggies into a blender.

Step 2

Squeeze the roasted garlic cloves out of the bulb into the blender.

Step 3

Pour ½ cup of heavy cream onto the oven tray, and scrape off any flavorful browned bits from earlier.

Pour the cream into the blender.

Step 5

Add cream cheese and blend until completely smooth and creamy.

Cook the Pasta & Finish:

Step 1

Boil rigatoni or your favorite pasta in salted water until al dente.

Step 2

Reserve some pasta water before draining.

Step 3

In a pan on medium heat, pour in the blended roasted bell pepper sauce.

Step 4

Add a splash of pasta water to loosen and create a silky consistency.

Step 5

Add in the cooked pasta, tossing to coat.

Step 6

Add a bit more pasta water if needed to adjust the sauce texture.

Serve:

Step 1

Plate the pasta and garnish with freshly grated Parmesan cheese and finely chopped parsley (if using).
