Juicy Mediterranean Grilled Chicken Breast

2 tsp lemon zest •

juice from 1 medium lemon roughly 1.5 oz of juice (3-4 T) •

3 oz mild oil like avocado oil (4 T) •

4 cloves garlic •

2 tsp kosher salt Diamond Crystal brand •

½ tsp ground cinnamon •

½ tsp ground cumin • ½ tsp ground coriander •

¼ tsp onion powder •

1.25-1.5 lb boneless skinless chicken breast appx. 2 medium-to-large breasts

Instructions

1. Prep the chicken first. Place the raw boneless skinless chicken breasts in a gallon-sized sealable plastic bag (like a ziploc).

2. Press the air out using your hands and seal the bag, making sure the chicken breasts are lying flat. Place the bag on top of a cutting board and place a thin towel over it — this will help prevent a hole from getting in the bag. Use a meat mallet or rolling pin to pound on the thicker portion of each chicken breast. Once each breast is about the same thickness (roughly one-third to one-half an inch), you can stop. Set the bag with the breasts aside.

3. Next make the marinade. Start by zesting the lemon. Take out a microplane or other zester, as well as a large liquid measuring cup.

4. Juice the lemon into the same cup as the zest.

5. Mince the garlic using the sharp knife and cutting board or use a garlic press to press the garlic into the cup with the lemon.

6. Pour the oil into the measuring cup, add in the kosher salt and spices into the cup. Add in the lemon zest and juice as well, stirring with a whisk to combine everything.

7. Open the plastic ziploc bag and pour the marinade in it. Press any air as best you can out of the plastic bag, then seal it. Squish everything together in the bag to help cover the chicken with the marinade, then place in the fridge for 20 minutes.

8. After the 20 minutes are up, remove the chicken from the fridge, flip it over to help distribute the marinade, and place on the counter for 10 minutes to warm slightly. While it's warming, preheat your grill to 375F.

9. Once the grill reaches temperature, use a pair of tongs to remove the breasts from the bag and place them on the grill grates (you can discard the bag with the marinade). Close the lid and let the breasts cook for 5 minutes on the first side, then open the lid, use tongs to flip the chicken breasts, and close the lid to let the breasts cook for another 5 minutes.

10. After those 5 minutes are up, open the lid and check the internal temperature of the breasts. Remove them from the grill once they reach an internal temp of 165F, which may require another 3 to 5 minutes of cooking.

11. let rest for 5 minutes on a cutting board, then slice
