Beef short rib and leek hotpot

for the beef ribs:
4 beef short ribs (1.2kg)
1tbsp olive oil
2 red onions, sliced into rings
4 garlic cloves, crushed
500ml beef stock
3tbsp Worcestershire sauce
for the hotpot:
60g butter
1tbsp extra virgin olive oil
400g leeks, sliced
1 onion, chopped
750g waxy potatoes, such as Desiree, sliced
1 tsp thyme leaves
60g raclette cheese, grated

1 Heat the oven to 180C/Gas Mark 4. For the beef ribs, heat the oil in the base of a flameproof casserole. Season the beef and fry with the onions and garlic, turning as needed, for 5mins, until the meat is browned.
2 Add the stock and Worcestershire sauce. Cover and cook in the oven for 2hrs 30mins.
3 For the hotpot, in another casserole, heat half the butter, add the oil and fry the leeks and onions, stirring. Cover, cook for 10mins, then remove.
4 Put half the potatoes in the bottom of the casserole and season. Remove the meat from the ribs and shred. Pile on top of the potatoes, then spoon over the leek mixture. Arrange a layer of potatoes on top, pour in the stock from the ribs, season, then sprinkle with thyme and cheese.
5 Cover then cook the hotpot in the oven for Ihr 30mins.
6 Remove the lid and dot the potatoes with the rest of the butter. Cook, uncovered, for 30mins, until golden.
