Chicken Parmesan

4 chicken breasts, flattened between cling film using a mallet or rolling pin
2 tablespoons of dry plain breadcrumbs
1/4 cup freshly grated Parmesan cheese
1 teaspoon of dried mixed herbs
Salt and freshly ground black pepper
4 tablespoons of vegetable oil or frying
Petunjuk
1. Mix the breadcrumbs with the parmesan cheese and the mixed herbs.
2. Roll the flattened chicken breasts in the crumb mixture.
3. Heat 4 tablespoons of vegetable oil in a non-stick pan. Cook the chicken breasts for 3 minutes on each side. Cover and cook over medium heat until done, about 2 to 3 minutes, making sure they don't burn. (Cut into one breast to make sure it is not pink inside.)
Catatan
1. You can also make this with turkey meat.
2. Make sure to use the mallet or rolling pin to batter the chicken or turkey breast into thin pieces so it cooks quickly. You don't want to cook the chicken too long as it will get dry and the cheese will get burnt.
3. You can make the chicken parmesan and cut it into pieces and serve in a caesar salad too.
