CHICKEN AND CHORIZO PAELLA

120g chorizo, peeled and sliced
3 chicken fillets, chopped into bite-sized pieces
1 large onion, finely chopped
I garlic clove, crushed
1 tsp ground turmeric
½ tsp smoked paprika
225g long grain rice
600ml chicken stock
Salt and black pepper
1 x 400g tin of chopped tomatoes
1 red pepper, deseeded and sliced
120g frozen peas
Squeeze of lemon juice

1. Heat the chorizo in alarge paella pan ot frying pan over a medium-high heat until it releases its oils. Remove from the pam Brown the chicken on ail sides, Add the onion, garlid„ tumeric and paprika and cook fo two minutes:
2 Add the rice, stock and chorizo, Bring to the boil and season, then turn the heat to medium. Cook, covered for 15 minutes.
3 Add the Chopped tomatoes, sliced pepper and frozen pees, and cook for a further 10 minutes or until the chicken is completelv cooked and the rice has absorbed all of the liquid. Squeeze over some lemon juice and serve.
