SO-SIMPLE BRAISED BEEF

1 tbsp olive oil
2kg chuck beef or housekeepers cut,
boneless and trimmed of excess fat
Salt and black pepper
50ml red wine
2 onions, chopped
6 garlic cloves, crushed
500g baby potatoes, larger ones halved
4 large carrots, cut into 5cm chunks pieces
2 celery stalks, chopped
3 tbsp balsamic vinegar
2 tbsp Dijon mustard
1 tsp brown sugar
2 tbsp fresh thyme
250g beef stock
2 tbsp plain flour

1 Heat the oil in a large pan or casserole dish over a high heat. Season the beef generously with salt and pepper. Sear the beef on all sides until browned. Transfer to the bowl of a slow cooker.
2 Pour the wine into the pan you used for browning and allow to bubble over a high heat for 2-3 minutes, using a wooden spoon to scrape up any sticky bits from the bottom.
3 Pour the reduced wine into the slow cooker with the beef Add the onions, garlic, potatoes, carrots, celery, balsamic, mustard, sugar, thyme and some salt and black pepper.
4 In a jug, stir the beef stock together with the flour. Pour into the slow cooker.
5 Cook on high for 4-5 hours or low for 6-8 hours, or until the meat is tender and falling apart, and the vegetables are soft.
6 Taste and add any extra balsamic vinegar, brown sugar, salt or pepper to taste, until reaching your desired flavour.
7 Slice the beef and serve with the potatoes and vegetables, drizzled with the gravy.
