I x 350g packet of fruit mix
300mI cold tea
125g caster sugar
1 egg, beaten
225g self-raising flour
A good pinch of mixed spice
A ring, or other charms
Honey or golden syrup, melted
Petunjuk
1 Place the fruit and tea in a bowl and leave to soak overnight
2 The following day, preheat the oven to 170'C/150'C fan/gas mark 3 and grease and line a 20cm round cake tin or a standard 900g loaf tin.
3 Stir the sugar, egg, flour and mixed spice into the fruit mixture.
4 Wrap the ring (or other charm) in greaseproof paper and stir into the mixture.
5 Transfer to the tin and smooth to an even layer. Bake for one hour, or until risen and firm to the touch.
6 Remove from the tin and leave to cool on a wire tray. When cold, wrap in parchment paper and leave for two days before slicing.
7 Before slicing, brush over some melted honey or golden syrup
