Gently place the fish fillets into the simmering curry base.

Cover the pan and cook for 6–8 minutes, depending on the thickness of the fish, until it’s tender and easily flakes apart.

Squeeze in the lime juice, adjusting for a bright, zesty flavor.

Step 4: Garnish & Finish

Once the fish is cooked through, taste the curry and adjust seasoning with more salt, pepper, or lime juice if needed.

Garnish with fresh chopped cilantro and basil for a burst of freshness.

Optional: Slice a fresh green chili and add it for extra heat if desired.
