3 lb chuck roast

1 large yellow onion, sliced

5 garlic cloves, minced

2 tbsp avocado oil

2 tbsp butter

1 packet ranch seasoning

1 packet au jus gravy mix

8 oz tomato sauce

2½ cups beef broth

1 tbsp Worcestershire sauce

Thyme, rosemary, 2 bay leaves

Salt & pepper

Fresh parsley for garnish

Pat roast dry and season with salt, pepper, garlic powder, onion powder.

Sear in hot oil 4 min per side until golden.

Transfer to crockpot.

In the same skillet, add butter, sauté onions 2–3 min, add garlic for 1 min.

Stir in tomato sauce, ranch, au jus, then whisk in broth and Worcestershire. Simmer 3–5 min.

Pour over roast, add herbs, cover, and cook LOW 8 hrs or HIGH 4–5 hrs.

Shred and serve over mashed potatoes or noodles, topped with gravy and parsley.

Baked Chicken Leg Quarters

Crispy, juicy, and deeply flavorful.

Ingredients

4 chicken leg quarters

3 tbsp tomato paste

2 tbsp olive oil

2 tbsp duck fat

4 garlic cloves, minced

2 tbsp chopped fresh herbs (rosemary, thyme, or oregano)

1 tsp sumac

1 tsp turmeric

1 tsp salt

½ tsp black pepper

2 large onions, thinly sliced

1–2 lemons, thinly sliced

Instructions

Preheat oven to 375°F (190°C).

Mix tomato paste, olive oil, duck fat, garlic, herbs, sumac, turmeric, salt, and pepper into a paste.

Coat chicken evenly.

Spread onions and lemon slices in a baking pan, place chicken on top.

Bake 25 min, then raise to 400°F (200°C) for another 20 min until golden and internal temp hits 165°F (74°C).

Rest a few minutes, top with cilantro, and serve.
