One Pan Winter Chicken Lasagne

I've always loved making lasagne like this. It's quick, there's hardly any dishes and it tastes incredible...

Oil for frying
4 savoy cabbage leaves, tough stem removed and finely sliced
1 large leek finely sliced
500g chicken mince
40g butter
45g flour
500ml (18 fl.oz) chicken stock
400ml milk (+ 50ml) to make the sauce)
1 tbsp dried oregano
4 sheets of fresh lasagne (approx size 25cm x 15cm per sheet) cut lengthways into 2-3 cm strips
280g garlic & herb philadelphia (soft cheese)
80g (3oz) grated cheddar cheese
salt and ground black pepper

Heat a drizzle of oil in a non-stick pan that can be used under the grill and on the hob.
Add the cabbage and leeks and fry on a medium heat for 5 minutes until soft.
Remove from the pan and add the chicken mince with a little more oil.
Fry for 3-5 minutes until no longer pink.
Stir in the butter until melted.
Stir in the flour on the heat, until it disappears into the chicken mince and the mixture begins to sizzle.
Add half the stock and bring to the boil, stirring continuously until it thickens and is bubbling. Add the other half of the stock and bring it back to the boil whilst stirring.
Do the same with the 400ml of milk until you have a smooth sauce.
Return the veg to the pan with the oregano. Season with salt and pepper.
Add the lasagne strips to the pan and stir until all strands are covered in sauce.
Bring to the boil and simmer for around 3 minutes, or until the pasta is soft.
In the meantime, blitz the soft cheese and 50ml of milk, together with some salt and pepper..
Take the pasta off the heat and pour the sauce over the top, spreading it evenly right up to the edges.
Top with grated cheese, before grilling on a medium heat for 5 minutes until the cheese is golden brown and toasted.
