One-pan Sunday roast chicken

750g potatoes, eg, Maris Piper, peeled and halved
500g carrots, sliced lengthways
500g parsnips, peeled and sliced lengthways
2 red onions, cut into wedges
a few sprigs of rosemary
4tbsp light olive oil
1 medium chicken
150-250g Brussels sprouts, halved

1 Heat the oven to 200°C/Gas Mark 6. Put the potatoes, carrots, parsnips, onions and rosemary in a large roasting tin, pour over half the oil and mix well to coat them. Push the vegetables to the sides of the pan, place the chicken in the centre and rub the remaining oil all over it. Season the chicken and vegetables by grinding some black pepper over and sprinkling with salt flakes.
2 Roast the chicken for Ihr, turning the vegetables halfway through. Add the Brussels sprouts to the pan, and stir to coat them in the cooking juices. Return the pan to the oven for a further 15-30mins, until the Brussels sprouts are starting to brown slightly, and the chicken juices run clear.
3 Remove the chicken from the oven, transfer it to a warm plate and allow it to rest for 10-15mins before serving. If the vegetables need to be crisped a little more, return them to the oven while the chicken is resting, otherwise transfer them to a serving dish and keep them warm until serving.
