Chorizo & Ricotta Cannelloni

Bahan-bahan

2 onions, thinly sliced

100g cooking chorizo, finely chopped

2 garlic cloves, crushed

Cooking oil spray

1 tablespoon chopped rosemary leaves

150g button mushrooms, thinly sliced

1 red pepper, chopped

250g pack (6) fresh lasagne sheets

300g ricotta

aog grated Parmesan

400g tomato pasta sauce

80g grated lighter mozzarella

Petunjuk

1 Heat a large frying pan over medium heat. Spray the onion, chorizo and garlic with oil. Saute for 2 minutes or until the onion is soft. Stir in the rosemary, mushroom and pepper for 2 minutes or until the mushrooms is tender.

2 Cut each lasagne sheet in half lengthwise. Place in a large heatproof bowl and cover with boiling water. Soak for 5 minutes or until tender. Drain well.

3 Stir the ricotta and half the Parmesan into the onion mixture. Spoon h2 of the ricotta mixture along the centre of each lasagne sheet. Roll to enclose.

4 Preheat the grill to high. Spray a 1.5- litre shallow ovenproof dish with oil. Pour one-third of the pasta sauce over the dish base. Arrange the cannelloni, in a single layer, over the sauce. Top with the remaining pasta sauce, mozzare and and remaining Parmesan. minutes or until Golden.
