Chicken & Chorizo Pasta Bake

250g penne pasta
1tbs olive oil
4 boneless chicken breasts,cubed
1 red pepper, chopped
225g fresh chorizo sausage, diced
600g passata
1/2 tsp dried red chilli flakes
100g grated mozzarella & cheddar mix
25g freshly grated parmesan cheese

Petunjuk
1. Preheat oven to 190 c/gas 5.
2. Bring a large pan of light salted waterto the boil. Add pasta & cook for 8-1 Omins or until aldente, drain & set aside.
3. Heat the oil in a large deep frying pan over medium/ high heat. Add the chicken & lightly brown on all sides.
4. Add the red pepper & chorizo & cook for 5 minutes until the chorizo is hot & the chicken is no longer pink in the centre.
5. Add the chilli flakes & cook for 1 minute. Add the passata, bring to a simmer over medium/high heat, then reduce heat to medium/low & simmer for 5 minutes, until the sauce has thickened.
6. Add the drained pasta to the frying pan & mix well. Spoon the mixture into an ovenproof dish, add about a quarter of the cheddar & mozzarella mix & stir into the sauce mixture. Sprinkle the remaining cheese over the top. Bake in the centre of the oven for 30 minutes or until the top is golden.
7. For a richer taste 250ml of single cream can be added to the passata (reduce the amount of passata to 300g if you do this).
