Cheeseburger Rice

1 cup long-grain white rice (rinsed)

1 cup shredded cheddar cheese

In a large skillet, add 1 tablespoon olive oil and ½ cup diced onion. Cook for 3 minutes, until tender. Add 1 pound lean ground beef. Crumble and cook until browned, about 7 minutes.
