BASIC WHITE YEASTED LOAF

500g strong white flour (extra for dusting)
2 tsp fine sea salt
Pinch of sugar
7g sachet fast-action yeast
4 tbsp olive oil, plus extra for greasing
300mI warm water
Petunjuk
1 In a bowl, combine the flour with the salt and sugar. Add the fast-action yeast and stir to combine.
2 Make a well in the centre, then add the olive oil and warm water and mix well. If the dough seems a little stiff, add another 1-2 tablespoons of water and mix well. Allow to rest for five minutes to allow the flour to fully absorb the liquid.
3 Preheat the oven to 220°C/200°C/gas mark 7. Lightly grease a 900g loaf tin with oil.
4 Transfer the dough to a lightly floured work surface and knead for 10-15 minutes until smooth and springy. Place in the prepared tin and leave to rise for one hour or until doubled in size.
5 Dust the loaf with some extra flour and cut a few lines into the top of the loaf with a sharp knife.
6 Bake for 25-30 minutes until the loaf is golden brown and sounds hollow when tapped underneath. Cool on a wire rack.
