Paprika Chicken Nuggets

¾ cup (180 g) 99% fat-free plain
Greek yoghurt
1 garlic clove, crushed
1 teaspoon smoked paprika
600 g skinless chicken breast, cut into 2 cm pieces
50 g panko breadcrumbs
1 teaspoon garlic salt
Baby rocket leaves, to serve Lemon wedges, to serve
Petunjuk
1 Mix yoghurt, garlic, half the paprika and ¼ cup (60 ml) water in a large bowl. Add chicken and stir to coat in yoghurt mixture. Cover and refrigerate for at least 2 hours or overnight (see tip).
2 Preheat oven to 180°C. Combine breadcrumbs, garlic salt and remaining paprika in a large snap-lock bag. Season with salt and pepper.
3 Drain and discard excess yoghurt from chicken. Add chicken to crumb mixture in bag. Seal the bag and shake well to coat chicken in the crumbs.
4 Line a large baking tray with baking paper. Place a wire rack over the prepared tray and lightly spray with oil. Arrange chicken pieces on the rack in a single layer. Lightly spray again with oil. Bake for 25-30 minutes, turning halfway through cooking time, until golden and cooked through. Serve with rocket and lemon wedges.
