Carrot Cake Porridge

Ingredients:
1/3 cup Rolled oats
¾ Cup Light Milk
½ tsp Cinnamon
¼ tsp nutmeg or mixed spice
1 medium Carrot, grated
1 tbsp Sultanas
10 g WPI protein powder - Vanilla or natural
To Serve:
1 tsp Tahini or nut butter of choice
2 tsp Maple Syrup (or sugar free maple syrup if preferred)

Instructions:
1. Crate the carrot and pop in to a small saucepan together with the rolled oats and spices. Pour in the milk, stir everything together.
2. Bring the mixture to a boil then reduce the heat to a low simmer. Add the sultanas. Cook, stirring occasionally, for 7-10 minutes, or until the porridges reaches your preferred consistency. Add a little extra water and/or milk to thin the porridge out as it's cooking, if needed.
3. While the porridge is cooking, mix your protein powder with a splash of milk or water and whisk until there are no lumps.
4. Once the porridge is cooked, remove from the stove and stir through your protein powder mix.
5. Serve porridge in a bowl topped with tahini (or nut butter) and maple syrup.
