Middle Eastern chicken flatbreads

500g cooked rotisserie chicken, shredded

1 tsp ground cumin

½ tsp dried oregano

Salt and black pepper

1 tbsp olive oil

4 pitta breads, naan breads or other flatbreads

100g hummus

200g plain Greek yoghurt

5 tbsp fresh parsley leaves, chopped

Juice of ½ a lemon

1 cucumber, sliced lhcm thick

2 tomatoes, chopped

1 head of Little Gem lettuce, chopped

Petunjuk

1 In a bowl, combine the chicken with the cumin, oregano and some salt and pepper. Toss to coat.

2 Heat the olive oil in a large pan over a medium-high heat. Add the chicken and cook for 3-4 minutes until completely heated through, stirring occasionally. Transfer to a serving bowl.

3 Meanwhile, turn the grill on to a high heat and cook the flatbreads until warmed.

4 In a bowl, stir together the hummus, yoghurt, parsley and lemon juice. Season with salt and black pepper.

5 Serve the flatbreads with the chicken, the hummus yoghurt dressing and the cucumbers, tomato and lettuce, allowing people to assemble their own flatbreads at the table.

Catatan

TEST KITCHEN TIP If you're not under time pressure, why not make your own flatbreads? In a bowl, combine 200g plain flour, 100ml warm water, a drizzle of olive oil and a pinch of salt. Turn out and knead for 4-5 minutes, then divide into eight equal portions. Roll out until 3-4mm thick and cook on a hot pan for 1-2 minutes per side.
