Cheesy fish and spinach bake

500g spinach leaves Butter, for greasing Salt and black pepper 600g white fish fillets (such as haddock, hake, coley, pollock or ling) 20 cherry tomatoes 50g butter 1 leek, washed and chopped For the topping: 200ml creme fraiche Juice of ½ a lemon 100g Cheddar cheese, grated A small handful of dried breadcrumbs To serve: Roasted baby new potatoes
Petunjuk
1 Preheat the oven to 1800C/160°C fan/gas mark 4. Place the spinach in a large cola over a sink and carefully pour over a kettle of hot water to wilt it. Run the spinach under the cold tap to cool and then squeeze out a:
liquid from the spinach as possible.
2 Grease a gratin dish with butter. Rough chop the spinach and spread evenly over base of the dish. Season the spinach with salt and pepper and lay the fish fillets or skinned side down. Place the cherry tomatoes
in and around the fillets.
3 Heat the butter in a pan and cook the for 4-5 minutes until just softened. Rem a bowl and mix with the creme fraiche, juice and Cheddar and season well. Spread this mixture over the fish and spinach ar everything with the breadcrumbs. Bake minutes until bubbling and golden and s with baby new potatoes.
