Creamy Corn Chowder

2 tbsp extra virgin olive oil
1/2 onion, diced
3 cloves garlic, minced
3-4 small carrots, diced
3 medium-sized potatoes, diced
3 medium-sized potatoes, grated
3 cups broth
1 & 1/2 can sweet corn
3 cups whole milk
1 & 1/2 tsp cornstarch
Salt & black pepper to taste
Chives, to garnish

Sauté olive oil, onion, garlic, carrots, and add salt to bring out the moisture. Add grated and diced potatoes, then add the broth. Cook until the potatoes and carrots are a little soft.
Add corn and 2 cups of milk. Mix cornstarch with 1 cup of milk and add to the chowder. Season with salt & pepper and cook for another 5-7 minutes. The chowder will get thicker, and the vegetables will be soft. You can adjust the amount of cornstarch based on how thick you want it to be.
Garnish with chives and enjoy.
